General Info

  • Cucumbers are frequently eaten raw (both with and without the peel), so before eating or cutting, consumers should properly wash this vegetable under warm running water. Even if the cucumber will be peeled before consumption, it is still necessary to wash it first to prevent cross-contamination. Firm fruit, such as cucumbers, can also be scrubbed with a clean produce brush.

  • Refrigerate pre-cut or pre-peeled veggies to keep fresh for longer periods of time.

  • For many countries, cucumbers are commonly imported, and as a result, they may be handled at multiple points before being purchased by the consumer, therefore washing this produce is essential to reducing the risk of foodborne illness.

  • Cucumbers are 90%–95% water and so they have little nutritional value when compared to other vegetables.

  • Cucumbers have 45 calories per serving, 6 % vitamin A, 6 % vitamin B6, and 14 % vitamin C.

  • By applying sliced cucumbers to the damaged area, the cucumber, like the aloe plant, can help to relieve irritated skin and sunburn. Because it has anti-inflammatory effects, the slices can also reduce puffiness under the eyes (commonly known as “bags” under the eyes).

  • Cucumbers are a good source of Magnesium, Folate, Calcium, and Potassium, as well as vitamins A, B1, B6, C, and D.

  • Cucumbers also contain silica, which helps strengthen connective tissue and maintain joint health.

  • Cucumbers include three lignans: lariciresinol, pinoresinol, and secoisolariciresinol, which all assist in lowering the incidence of diseases like breast cancer, ovarian cancer, uterine cancer, and prostate cancer.

Harvesting

  1. If you want to harvest cucumbers, you can use scissors throughout its growth to cut fresh cucumbers as they mature.

  2. Make sure to add trusses to the plant to hold its tendrils around it as it grows and expands, keeping it robust and standing.

  3. After a while, start shaving off the extra foliage of the branches with no flowers to make sure the nutrients are well absorbed by the other leaves that are flowering. Cut from bottom up the plant.
